A Month’s Worth Of Dinners

I usually throw away last week’s meal plan (which I am rethinking since it’s hard to come up with meal ideas sometimes), but I decided to keep last month’s meal ideas in case you need some new ones! I typically eat leftovers or sandwiches for lunch and a frozen pizza once or twice a week for dinner, so I only plan 5 dinners for each week.

Week 1:

  1. Cheesy Quinoa Bake
  2. Mandarin Spinach Salad
  3. Sweet Corn Enchiladas
  4. Pasta Alfredo with Spinach, Sun-dried Tomatoes, & Chicken Sausage (with Garlic Bread)
  5. Veggie Burgers & Fries

Week 2:

Veg Enchiladas

  1. Margherita Pizza with Chicken
  2. Black Bean & Sweet Potato Enchiladas
  3. Lasagna with Garlic Bread
  4. Baked Beans with Shredded Cheese, Salsa, & Tortilla Chips
  5. Chicken Cordon Bleu with Green Beans & Roasted Red Potatoes

Week 3:

  1. Ute’s Stuffed Mushrooms with Rice Pilaf
  2. Polenta & Goat Cheese Stuffed Peppers
  3. Southwest Salad with Chicken
  4. Penne Pasta with Marinara & Mixed California Veggies
  5. Lentil Soup with Trader Joe’s Feta Pastry Bites

Week 4:

  1. Quinoa Stuffed Peppers 
  2. Grilled Tofu with Corn Salsa, Green Beans, & Roasted Red Potatoes
  3. Burritos
  4. Angel Hair Pasta with Marinara, Meatballs & Garlic Bread
  5. Grilled Cheese with Tomato Soup
